EGG-SPINACH BRUNCH 
2 pkgs. chopped spinach, well drained
12 hard boiled eggs
2 c. grated sharp Cheddar cheese
1/2 c. milk
1 tbsp. flour
2 cans cream of mushroom soup
1 lb. bacon, fried and crumbled
1 onion, finely chopped

Butter 9x15 oblong pan. Spread spinach evenly. Flour lightly to absorb water. Sprinkle onion. Cut eggs in half and place egg side up. Milk and soup mix and pour over eggs. Sprinkle half of bacon. Top with cheese. Top with rest of bacon. Bake 350 degrees for 20-30 minutes or until bubbly. (Can make day before and refrigerate!)
