SPINACH PIE 
1 lb. spinach, diced (fresh or frozen)
3-4 med. onions, diced
1 clove garlic, diced or crushed
1/2 lb. feta cheese, crumbled
1 c. rice, cooked
Salt and pepper to taste
Olive oil
2 unbaked pie crusts

Mix spinach, onions, garlic, feta cheese, and rice together. Salt and pepper according to taste. (I don't use salt because the feta cheese has salt in it which is enough for me.) Jab bottom crust with fork and gently rub a bit of olive oil all over.

Put mixed ingredients into crust and sprinkle olive oil over them. Put top crust on, jab all over with fork and gently rub olive oil on top crust. Bake at 350 degrees for 1 hour or until done. 8 or 9-inch 2-crust pie.
