EGG & SPINACH FLANTANY 
2 pkg. frozen spinach
4 eggs
1 can evaporated milk
1/2 tsp. salt
1/4 lb. American cheese, grated
3 tbsp. melted butter
2 c. fresh bread (cubed, crust removed)

Cook spinach according to package directions and then drain. Put in a buttered baking dish. Pour melted butter over bread cubes and let stand a few minutes. Add salt and cheese to milk and cook 2-3 minutes.

Make 4 wells in spinach and break raw egg into each well. Pour hot milk sauce over leaving egg yolk uncovered. Place bread over milk sauce and brown about 25 minutes in 350 degree oven or until golden brown.
