SHRIMP CHOW MEIN 
1 lb. shrimp, cleaned and diced
1 med. onion
2 tbsp. oil
Soy sauce
1 c. rice
2 eggs
1 sm. can mushrooms, diced
Salt and pepper to taste

Cook rice and onion together dry. Cook eggs (beaten) in oil as an omelette, then dice eggs. Blend above ingredients and add shrimp. Cook until shrimp are done. Add soy sauce to taste. Pour this over chow mein noodles.
