MEXICAN CORNBREAD 
1 c. corn meal
1 c. milk
3/4 tsp. salt
1 chopped onion
1 can green chiles
2 eggs, beaten
1/2 tsp. baking powder
1 can creamed corn
1 lb. Cheddar cheese
1 1/2 lb. ground beef

Brown meat with onion; drain. Mix together the corn meal, eggs, milk, baking powder, salt, corn and chile. Pour 1/2 of batter in greased casserole dish, all of the meat and grated cheese. Put remainder of batter on top of cheese.

Bake at 350°F for approximately 45 minutes. Recipe can be doubled.
