PUMPKIN RAISIN CAKE | |
2 c. flour 2 c. sugar 2 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 1/2 tsp. cloves 1 c. oil 4 eggs 15 oz. pumpkin 1/2 c. chopped walnuts 1/2 c. raisins 1/3 c. soft butter 3 oz. soft cream cheese 2 c. powdered sugar 1 tbsp. milk 1 tsp. vanilla Heat oven to 350°F and grease 13X9 pan. Mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, salt and cloves. Mix oil, eggs and pumpkin; add to dry ingredients. Add nuts and raisins. Bake 40-50 minutes. While cake is cooling, mix butter, cream cheese, powdered sugar, milk and vanilla. Beat until smooth and creamy. Frost cake. |
