CREOLE STEAK 
Flour
2 pounds round steak, cut in 1-inch strips
1/4 cup oil
1 medium onion, chopped
2 bell peppers, chopped
1 16-ounce can tomatoes
1 8 -ounce can tomato sauce
1 can water
2 cups corn, cooked
2 cups butterbeans, cooked
1 cut okra, sliced
1 bay leaf
dash tabasco
salt and pepper
2 cups cooked rice
parsley

Lightly flour meat and brown in hot oil; set aside. Sauté onion and pepper. Combine all ingredients except parsley, simmer 45-50 minutes. Serve over steamed rice tossed with parsley.

Serves 8.
