CANDY POTATOES & HAM
6-8 lb. ham
2 c. light brown sugar, packed tightly
1/2 stick of butter
20 oz. can unsweetened sliced pineapples
12 lg. white potatoes

Preheat oven to 350 degrees. I use 18x13 inch pan. Place heavy duty aluminum foil on bottom of pan using a fold in the middle of foil to make a divider -- ham on one side, potatoes on the other side. Place ham on one side and cover with half of the juice from the pineapple and put pineapple slices on top. Put in oven.

Peel potatoes and boil for about 10 minutes. Remove from kettle and cut in half. In large skillet, put butter, half the juice from the can of pineapple and add the brown sugar. Stir constantly over medium heat (about 10 minutes). Done when you can form a ball of brown sugar mix in a cup of cold water (looks like candy).

Take pan with ham out of oven. Put partially cooked potatoes in section aside of ham. Pour brown sugar mixture over potatoes. Put back into oven. About every 15 minutes turn and baste potatoes with brown sugar mixture. Cooking time for whole procedure - about 1 1/2 hours. Serves 6-8. Serve with vegetables.
