ZUCCHINI BREAD 
1 c. sugar
1 tsp. baking soda
1 c. mashed, cooked squash
1/2 c. oil
2 eggs
1/4 c. water
2 c. flour
1/2 c. brown sugar
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
1/2 c. nuts

Combine sugar, squash, oil and eggs; beat. Add water and mix. Add dry ingredients. Add nuts. Bake in greased and floured loaf pan at 350 degrees for 65 to 70 minutes or until done.
