NO MEAT LOAF 
1/3 c. chopped celery
1/3 c. chopped green pepper
1/2 c. walnuts
1/2 c. cashews
1/2 c. almonds
1 3/4 c. cooked rice
1 1/2 c. grated Monterey Jack cheese
1 tbsp. sage
1/2 tbsp. thyme
1 tsp. basil
1/2 tbsp. salt
1 tsp. black pepper
1 1/2 c. tomato sauce (or substitute with ketchup)

Grind nuts together. Combine ground nuts with cooked rice. Add 1 cup grated cheese. Add spices and chopped vegetables. Add 1/2 tomato sauce; mix well. Preheat oven to 350 degrees. Mold ingredients into a greased loaf pan. Cover with foil and bake 50 minutes. Uncover; top with remaining tomato sauce and cheese. Bake for 10 minutes more. Serve hot.
