CUCUMBER KIM CHEE 
2 cucumbers
1 tsp. salt
1 tsp. sesame oil
1/2 tsp. sesame seeds, toasted
1 clove garlic, minced
dash or two of cayenne

Peel and seed cucumbers. Slice thinly and sprinkle with salt. Let stand 15 minutes. Rinse and drain. Toast sesame seeds in a skillet over medium heat; watch closely as they burn quickly. Stir often. Combine sesame oil, sesame seeds, garlic and cayenne. Toss with cucumbers.
