PIE CRUST 
Crust:

3 cups flour
1 teaspoon salt
5 tablespoons water
1 1/2 cup shortening
1 egg well beaten
1 tablespoon vinegar

Cut shortening into flour and salt. Combine egg, water and vinegar. Pour liquid into flour mixture all at once. Blend with a spoon just until all is moistened. This is an easy crust to make. I roll the crust between wax paper and fold, Put into pan. On the top crust I brush canned cream, then cut holes, sprinkle sugar on top and put little pieces of butter on the holes. I like to mix in a large tupperwear container and shape into balls.

Filling:

3 cups pitted cherries
1 to 1 1/2 cups sugar
1/4 cups sugar
1/4 cup all purpose flour
dash of salt

I don't use cherry pie filling already prepared. For fresh or frozen cherries, combine 3 cups pitted cherries, 1 to 1 1/2 cups sugar, 1/4 cup all purpose flour, and dash salt. Put in 8 inch pie plate lined with crust.

Bake at 425°F, about 40 minutes. I put a strip of aluminum foil around the edge. I remove the foil 10 minutes before I take it out of the oven.
