LEMON FLUFF PUDDING 
3/4 c. sugar
3 tbsp. flour
1/4 tsp. salt
2 tbsp. melted shortening
1/4 c. lemon juice
Grated rind of 1 lemon
3 egg yolks, unbeaten
1 c. milk
3 egg whites

Beat egg whites in a small bowl for 2 minutes or until peaks form. Mix other ingredients in a large bowl for 3 minutes. Add beaten whites and mix for 1 minute. Pour into a 6 or 8 inch baking pan. Place baking dish in pan of hot water and bake at 325 degrees for 40 to 50 minutes. Serve hot with or without cream.
