MICROWAVE TAPIOCA FLUFF PUDDING 
1 egg, separated
3 tbsp. sugar
1/8 tsp. salt
2 tsp. milk
3 tbsp. tapioca
2 tbsp. sugar
3/4 tsp. vanilla

Combine egg yolk, 3 tablespoons sugar, salt, milk and tapioca in 1 1/2 or 2 quart bowl. Stand 3 minutes. Beat egg white foamy and beat in sugar to soft peaks.

Place tapioca mixture in oven and microwave 8 to 10 minutes on "8" or until mixture thickens. Stir twice. Fold tapioca mixture into meringue carefully. Stir in vanilla.

Since microwave ovens vary in power, you may need to adjust your cooking time.
