TAPIOCA PUDDING 
3 tbsp. minute tapioca
1/3 c. sugar
1 beaten egg
1 tsp. vanilla
1/8 tsp. salt, put salt in last
2 3/4 c. milk, scalded

To heat milk temperature just below boiling point, a thin skim form over milk.

Mix sugar, egg and tapioca; let set for a few minutes. Then mix sugar, egg and tapioca to scalded milk; bring to boil and boil over low heat for 5 minutes. Cover and let cool 20 minutes. Then add vanilla; then stir. Be sure to boil 5 minutes.
