PUMPKIN ROLL 
ROLL:

1/4 tsp. salt
3 eggs
1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
3 tsp. cinnamon

Beat all ingredients. Spread on cookie sheet lined with wax paper. Bake at 375 degrees for 10-12 minutes. Mix filling ingredients. When roll is cool, spread with filling. Roll up and cool.

FILLING:

1 c. powdered sugar
8 oz. pkg. cream cheese
4 tsp. butter
1/2 tsp. vanilla

NOTE: I usually double the ingredients for the "roll" and then I bake two cookie sheets of the pumpkin mixture. Then instead of making a roll, I spread the filling between the two layers of cake and sprinkle powdered sugar on the top.
