COCONUT LEMON BARS | |
1 c. sifted all-purpose flour 1/4 c. sifted confectioners sugar 1/2 c. butter 4 eggs 1 tsp. baking powder 6 tbsp. lemon juice 1 1/2 c. sugar 1 tsp. grated lemon rind (important) 3 c. flaked coconut Sift flour and confectioners sugar into bowl. Cut in butter using pastry blender until mixture resembles coarse meal. Press crumb mixture into bottom of greased 13 x 9 baking pan. Bake in 350 degree oven 15-18 minutes or until brown. Meanwhile, combine eggs, baking powder, lemon juice, sugar, and lemon rind in bowl. Beat until smooth; stir in coconut. Pour mixture over baked crust. Bake for 30 minutes at 350 degrees. Cool and cut into bars. |
