LEMON COCONUT BARS 
1 1/2 c. unsifted flour
1/2 c. powdered sugar
3/4 c. cold butter
4 eggs, slightly beaten
1 1/2 c. sugar
1 tsp. baking powder
1/2 c. lemon juice
3/4 c. coconut

In medium bowl, combine flour, powdered sugar and butter until crumbly. Press into bottom of lightly greased 9 x 13 inch pan. Bake at 350 degrees for 15 minutes. In large bowl, mix eggs, sugar, baking powder and lemon juice, pour over crust and top with coconut. Bake another 20 minutes or until golden. Cool. Cut into bars and store in refrigerator. For lemon bars, simply omit coconut.
