OATMEAL APPLE MUFFINS 
1 c. regular oatmeal
1 c. all purpose flour
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. brown sugar (not packed)
1 Granny Smith apple
2/3 c. milk
2 tbsp. vegetable oil
1 egg
2/3 c. chopped pecans

Preheat oven to 400°F. Mix dry ingredients together. Make a well in dry ingredients and add wet ingredients, apples and pecans. Mix just until moistened. Place in greased muffin pans.

Bake about 20 minutes.

Makes 8 jumbo muffins.
