GRANDMA'S LEMON PIE 
1 c. sugar
2 egg yolks, save whites
1 1/2 c. boiling water
2 tbsp. cornstarch, heaped
1 tbsp. butter
1 lemon
Salt (pinch)
1 (8 inch) pie crust

In double boiler mix sugar, cornstarch, salt and lemon juice. Mix well. Add water and heat until it just starts to thicken. Mix egg yolks with a little of the hot mixture, then add to the double boiler. Add butter and stir. Pour filling to already cooked pie crust.

MERINGUE:

2 egg whites, saved
1/2 c. sugar

Beat egg whites in a deep cool bowl (whites will be foamy). Slowly add sugar and beat until stiff. Heap meringue onto hot pie filling. Spread over filling. Seal over edge of crust. Put under broiler until brown.
