SAUSAGE LENTIL SOUP 
1 lb. lentils
10 c. water
1 lg. chopped onion
1 lb. smoked sausage
1 bay leaf
1 dash marjoram
2 dashes pepper
2 grated carrots
2 stalks chopped celery
3 lg. potatoes, chopped
1/4 c. dry parsley
Salt to taste

Wash and rinse 1 pound lentils. Add water to lentils in large pot. Add onion, sausage, marjoram, bay leaf and pepper. Cover and bring to a boil. Simmer 2 hours, stirring occasionally. Remove from heat. Cut sausage into 1/4 inch slices. Add carrots, celery, potatoes, and parsley. Cover and simmer 1 more hour, stirring frequently. Season to taste.
