GRILLED SALMON 
6 to 8 salmon steaks
1 c. olive oil
2 tbsp. soy sauce
1/4 c. chopped shallots
1 tsp. grated lemon rind
freshly ground pepper

Mustard Sauce:

1/2 c. mayonnaise
1/2 c. mustard
2 tsp. horseradish or to taste

Combine ingredients in a small bowl and mix well (except salmon). Arrange salmon steaks in a glass baking dish. Pour marinade over salmon and cover for 3 hours or longer. Turn several times. Wrap in heavy foil and grill on medium to low heat for 8 to 10 minutes on each side. Serve with mustard sauce.
