1 3/4 c. flour 1/2 tsp. baking powder 1/2 c. sugar 1/2 c. butter 1 tsp. caraway seeds 1 egg, beaten 1/2 tsp. grated lemon rind 1 tbsp. milk, cream or lemon juice Sift flour, baking powder and sugar into a bowl. Cut in butter until mixture is like coarse meal. Add caraway seeds, beaten egg, lemon rind and milk. Mix into a stiff dough. You may have to use your hands. Turn onto lightly floured board. Roll out thinly, cut into rounds 2 to 3 inches in diameter. Prick each with fork. Bake on cookie sheet at 375 degrees for 7 to 10 minutes. Makes about 60. Have with a cup of tea. Delicious spread with butter or just plain. |
