CATERER'S CHEESE CAKE 
CRUST:

1 pkg. Zwiebach toast
1 c sugar
1/2 c. finely chopped walnuts or pecans
1 tsp. cinnamon
1/2 c. melted butter

Mix together Zwiebach crumbs and remaining ingredients and press on side and bottom of spring bottom pan. Save enough of mixture to make top crust.

FILLING:

4 eggs, well beaten

1 c. sugar

1 lemon, juice and grated rind
1/2 tsp. vanilla
1/2 pt. table cream
1 1/2 lbs. (3 c.) cottage cheese, pressed through sieve or blended finely in electric mixer

Beat all together and pour into prepared pan. Cover top with remaining crust mixture. Bake in a moderate oven (350 degrees) for 1 hour. Let cool at least an hour before removing side of pan. Fills 9 inch spring pan 2 inches deep.
