FRESH BROCCOLI WITH OIL AND
LEMON
 
1 lb. broccoli
2 tbsp. water
2 tsp. olive oil
1 tsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper

Wash broccoli and discard tough portions of stalk. Split stalks lengthwise to uniform size for more even cooking. For a more tender broccoli, peel stalks with a paring knife before cooking. Arrange broccoli spears with stalks to outside of dish and flowerets in center. Add water. Cover and cook on full power 6 to 7 minutes. Let stand, covered, 3 minutes.

Just before serving, sprinkle olive oil, lemon juice and salt and pepper over broccoli.

Makes 4 servings.
