CHICKEN PARMIGIANA 
3 whole chicken breasts, skinned and halved
1/2 c. seasoned bread crumbs
1/4 c. grated Parmesan cheese
1 egg, beaten
Olive oil
16 oz. jar spaghetti sauce
8 oz. pkg. sliced Mozzarella cheese
3 c. hot, cooked spaghetti

Prepare chicken, combine bread crumbs and Parmesan cheese in medium bowl, set aside. Place egg in separate bowl, beat. Dip chicken pieces in egg, then in crumb mixture until coated. Heat olive oil in large skillet.

Saute chicken pieces, turning only once, until golden. Remove to a plate. Pour 8 ounces spaghetti sauce into a 13 x 9 inch baking dish, arrange chicken pieces over sauce.

Cover loosely with foil. Bake at 350 degrees for 40 minutes. Top each piece of chicken with Mozzarella cheese. Bake 10 more minutes until cheese is melted. Cook and drain spaghetti. Heat remaining spaghetti sauce. Serves 6.
