CHICKEN PARMIGIANA 
3 whole chicken breasts, split, skinned & boned
2 eggs, slightly beaten
1 tsp. salt
1/8 tsp. pepper
1 c. fine bread crumbs
1/2 c. oil
2 c. tomato sauce
1/4 tsp. basil
1/8 tsp. garlic powder
1 tbsp. butter
3/4 c. Parmesan cheese
8 oz. mozzarella cheese, sliced & cut into triangles

Beat boned chicken on cutting board until 1/4 inch thick. Combine eggs, salt and pepper. Dip chicken in egg mixture and roll in crumbs.

Heat oil until hot and quickly brown chicken on both sides. Drain oil from skillet. Pour in tomato sauce, basil and garlic salt; simmer for 10 minutes or until thickened. Place chicken in shallow casserole. Pour tomato mixture over chicken. Sprinkle Parmesan cheese over ingredients. Cover. Bake at 350 degrees for 45 minutes. Remove from oven and place mozzarella triangles across top of chicken. Bake about 10 minutes longer until cheese is melted.
