SUMMER SQUASH CASSEROLE 
1 med. onion, grated
1 lg. carrot, grated
1/4 lb. butter
2 lbs. sliced yellow summer squash
1 can cream of chicken soup
1 c. sour cream
1/2 pkg. Pepperridge farm stuffing mix

Cook squash and drain. Add rest of ingredients and stir in stuffing to thick consistency. Put in casserole dish and sprinkle stuffing on top. Bake at 350 degrees for 45 minutes. You can also add left over cooked chicken to this casserole for a one dish meal.
