POTATO PANCAKES 
1 potato per person or 4-5 potatoes, finely grated
Cracker meal (bread crumbs)
1/4 tsp. nutmeg
Oil
2 lg. onions, finely grated
1-2 eggs
Salt and pepper to taste

Grate potatoes (at least 4-5 potatoes) and onions (finely grated). Add beaten eggs and enough cracker meal to take up moisture. Add salt and pepper and nutmeg. Drop 1/4 cup of batter in hot oil. Fry until brown.
