SMOTHERED SWISS STEAK 
1/4 c. flour
1/4 tsp. pepper
2 tbsp. shortening
1 (16 oz.) can whole tomatoes, undrained
1 lg. green pepper, chopped
1 to 1 1/2 tsp. seasoned salt
2 lbs. round steak
2 med. onions, sliced
1 (8 oz.) can tomato sauce
6 carrots
Hot cooked rice (optional)

Combine flour, salt and pepper. Sprinkle half of flour mixture on steak, pound into steak, turn steak and repeat process. Heat shortening in a 10 inch skillet. Brown meat on both sides. Pour tomatoes over meat. Combine onions, tomato sauce, green pepper and garlic. Pour over steak. Cover and simmer 30 minutes. Add carrots, cover and continue cooking 1 hour. Can be served with hot rice.
