EGG SAUSAGE CASSEROLE 
1 lb. bulk sausage (Purnell's Old Folks Smoked)
2 1/2 c. milk
6 slices bread, cubed
1 tsp. salt
6 eggs
1 c. cheese, grated
1 tsp. dry mustard

Brown sausage; drain off fat; set aside. Whip together eggs and milk and add remaining ingredients. Butter a 13x9 pan and pour egg and milk mixture into it, distributing sausage evenly on top. Cover pan and allow to set several hours or overnight in refrigerator.

Bake at 325 degrees for 45 minutes or until set and lightly browned. Serves 8-10. If you want to eliminate the meat, add mushrooms for a different flavor.
