WESTERN BUNS 
1/4 c. warm water
1/4 c. milk
1/2 c. wheat germ
1 pkg. active dry yeast
4 tbsp. butter
2 1/2 - 3 c. unbleached flour
1 egg
Pinch sugar
2 tsp. salt

Dissolve yeast in warm water. Add pinch of sugar. Set aside for 10 minutes. Heat milk and butter, broken in small bits, until warmed. In a large mixing bowl, combine salt, wheat germ and flour. Make a well and add milk and butter mixture, yeast mixture and egg. Stir into a soft ball, adding only as much remaining flour as needed. Knead until smooth and elastic. Cover, let rise until doubled. Punch down and shape into 16 round buns. Place on greased baking sheet. Dust with flour. Cover, let rise until almost doubled. Bake at 375 degrees for 15 minutes or until golden brown. Cool.
