MIDDLE EAST BUTTER COOKIES

3 c. flour
1 c. farina
1 c. sugar
1 tbsp. rose water or orange blossom water
1 1/2 c. melted butter (about 3 sticks)
1 tbsp. milk

May be purchased at a Middle-East grocer or you may substitute with either vanilla or almond extract.

Combine flour, sugar and butter; add milk and flavoring. Knead well into dough. Form into small patties, flatten in palm of hand (cupped); fill with 1 teaspoon filling and close tightly.

Bake in 350 degree oven until lightly browned on the bottom, then broil until tops are lightly browned. Sprinkle with confectioners' sugar when cool.

FILLING:

2 c. ground walnuts
1/4 c. sugar
1 tbsp. rose water or orange blossom water
2 tbsp. butter, melted
