GREEN BEANS AND CARROT CASSEROLE 
3 c. cooked beans
3 c. sliced cooked carrots
5 tbsp. butter
3 tbsp. flour
1 sm. onion, minced
2 1/2 c. milk
1 tsp. salt
1/8 tsp. pepper
1 c. grated cheese
2 eggs, slightly beaten
3/4 c. bread crumbs browned in butter

Prepare beans and carrots. Melt 3 tablespoons butter in saucepan, add onion, cook until tender. Add flour, stir in milk, salt, pepper and cheese. Cook until thick. Remove from heat and pour over eggs. Arrange beans, carrots and sauce in alternate layers in casserole. Top with buttered crumbs. Bake at 350 degrees for 30 minutes or until set. "Good for carry in dinner".
