PEANUT BUTTER MERINGUE PIE 
1 (9 inch) baked pie crust
3/4 c. sugar
3 tbsp. flour
1/4 tsp. salt
3 c. milk
3 eggs, separated
1/2 c. peanut butter
1 tsp. vanilla
6 tbsp. sugar

Preheat oven to 400 degrees. Combine 3/4 cup sugar, flour and salt in saucepan. Mix in milk and lightly beaten egg yolks. Cook over low heat, stirring constantly. Bring to boil 1 minute or until mixture coats the back of a spoon. Remove from heat; stir in peanut butter and vanilla. Pour into pie shell; set aside.

Beat egg whites at room temperature until foamy. Gradually add sugar, 2 tablespoons at a time. Beat until peak forms. Spread over filling, making sure meringue touches all edges of crust. Bake 6 to 8 minutes or until lightly brown.
