SCALLOPS FETTUCINI 
1 lb. fettucini noodles
3/4 c. Half & Half
6 oz. Parmesan cheese, grated
1 lb. scallops, drained
1/2 c. butter (no substitute)
Basil
Parsley flakes
Crushed red pepper
Chives
Salt

Boil noodles in salted water until done for 5 to 10 minutes. Drain. While noodles are cooking, saute scallops on high heat in 1/4 cup butter with red pepper and basil to taste for 2 to 3 minutes. While sauteing scallops, melt remaining 1/4 cup butter, add Half & Half just until thoroughly warm. Do not boil. Put drained noodles in large shallow baking dish. Stir in 2 ounces grated Parmesan cheese, 1 tablespoon chives, 2 to 3 tablespoons parsley and mixture of butter and Half & Half. Spread scallops across top of noodles. Spread remaining Parmesan cheese over top. Broil in preheated 500 degree oven for 2 to 3 minutes until Parmesan cheese begins to brown.
