THE ULTIMATE PEANUT BUTTER
COOKIE
 
1 1/3 c. butter or shortening
1 c. creamy peanut butter
1 1/3 c. firmly packed brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla
2 1/2 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt

1. Preheat oven to 350 degrees.

2. Cream butter or shortening, peanut butter, brown sugar, sugar, eggs and vanilla in large bowl at medium speed until creamy.

3. Combine flour, baking soda and salt. Add to creamed mixture gradually, beating at low speed until thoroughly blended.

4. Shape dough into 1" balls and place on ungreased baking sheets. Press lightly with a floured fork in a criss-cross pattern.

5. Bake at 350 degrees for 10 to 12 minutes or until golden. Cool slightly then remove to cooling rack. Makes about 6 dozen.
