CHICKEN FOR TWO 
1 chicken breast, split, skinned and boned
2 tbsp. oil
1 clove garlic, chopped
3 carrots, sliced thin
2 sm. zucchini, sliced
1 c. frozen green beans (or fresh beans)
6 water chestnuts, sliced
1 tsp. Mrs. Dash (or use salt and pepper)
3 tbsp. soy sauce (Lite)
1 c. water
1 tbsp. cornstarch
1 tbsp. dry sherry (or cooking sherry)
2 c. hot cooked rice
2 tbsp. toasted sliced almonds

Slice chicken in small pieces; heat oil and stir fry 3 minutes. Add garlic and vegetables, Mrs. Dash, Soy sauce, and 3/4 cup water. Simmer 5 minutes. Mix cornstarch, sherry and rest of water. Stir in mixture until thickened. Serve over rice.
