GAZPACHO SOUP 
Uses up everything in the garden at the end of the summer.

1 clove garlic
1 tsp. salt
1/3 c. chopped mushrooms
3 tbsp. oil
1 c. chopped cucumbers
1 tsp. parsley
1 tsp. black pepper
3 c. tomato juice
1 c. chopped onions
2 c. chopped tomatoes
1 1/2 c. green pepper
1 c. chopped celery
2 tsp. chives
1/4 tsp. or more Tabasco
1/2 c. tarragon vinegar

Crush garlic, saute mushrooms in oil. Combine with rest of ingredients. Cover and chill for 3 hours.
