SPINACH NOODLE CASSEROLE 
1 pkg. (8 oz.) spinach noodles
Olive oil
1 carton (16 oz.) sour cream (2 c.)
Garlic
Salt and pepper
1 pkg. (10 oz.) frozen spinach
1 sm. onion, finely chopped
1/2 c. (or more) grated Swiss cheese
1/4 c. Parmesan cheese
1/2 c. mayonnaise
1 egg, beaten
Beau Monde seasoning
Bread crumbs
Additional Parmesan cheese
Butter

Cook noodles as directed on package; drain well. Add a touch of oil and stir. Then add sour cream and seasonings to taste. Mix gently and set aside.

Meanwhile, barely cook spinach and drain well. Combine drained spinach, onion, cheeses, mayonnaise and egg. Add salt, pepper and Beau Monde to taste.
