PEARSON HOUSE HUMMINGBIRD
MUFFINS
 
3 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1 c. mashed ripe bananas
2 tsp. vanilla
1/2 tsp. salt
3 eggs
1 1/4 c. oil
1 (8 oz.) crushed pineapple with juice
1 c. chopped nuts

In large bowl combine flour, sugar, baking soda, cinnamon and salt. In another bowl combine eggs, oil, pineapple, bananas and vanilla. Stir wet ingredients into dry ingredients until just combined. Fold in nuts. Spoon into greased or lined muffin tins until 3/4 full and bake at 350 degrees for 25-30 minutes. Makes 30 regular muffins.
