PROFESSOR REUBEN'S CASSEROLE 
1 (16 oz.) pkg. egg noodles
1 (16 oz.) can sauerkraut, drained
1 (12 oz.) can corned beef, chopped
1/2 c. milk
3/4 c. Thousand Island salad dressing
1/4 to 1/2 tsp. caraway seeds
1 tomato, thinly sliced
8 oz. shredded Swiss cheese

Prepare noodles as directed on package direction. Combine noodles, sauerkraut, corned beef, milk, salad dressing and caraway seed in 2 quart microwave safe casserole. Cover with casserole lid. Microwave (high) 10 to 12 minutes or until hot (150 degrees), stirring once or twice. Top with tomato slices, sprinkle with cheese. Microwave (high) uncovered 1 to 2 minutes or until cheese is melted. TIP: Casserole can be made ahead through step 2. Refrigerate. To serve, increase time in first cooking to 14 to 16 minutes. Serves 8. 310 calories each serving.
