POTATO SOUP - MADE FROM MANDIOCA 
1 lb. mandioca root (1/2 quilo)
1 qt. milk
Salt, pepper, and butter
Minced onion
Parsley or celery

Cook the mandioca; remove string. Beat in the blender with part of the milk. Add minced onion to taste and finely chopped parsley or celery; heat with the remaining milk. A little butter can be stirred in if desired. If the soup seems too thick, add a little more milk.
