ARROZ CON GANDULES 
3 cups rice
1 can gandules
1 cup pork cut into small cubes
1/2 cup sofrito
1 tablespoon garlic
salt and pepper, taste
1 envelope sazon goya con culantro y achiote
10 olives
1 can tomato sauce

In a pot, add olive oil and sauté pork til brown then remove. Add garlic and sofrito and sauté for a minute. Add olives, tomato sauce, salt and pepper and sazon and a little water and simmer for 3 minutes.

Return meat to pot and add gandules and mix well. Add 3 cups of either beer or stock of your choice and simmer for 5 minutes. Wash rice and drain and add to pot and mix well. Cook for 40 minutes.

Let rice sit about 15 minutes before serving.
