SPICED APPLES | |
3 lbs. apples 4 c. sugar 2 c. vinegar 3 sticks cinnamon 8 whole cloves 1/2 to 3/4 bottle red food coloring Mix and bring to a boil everything except apples. Wash apples, peel and remove core then slice about 3/8 inch thick. Have ready a large kettle half full of boiling water. Drop apple slices in a little while until partially tender. Remove from water with slotted spoon. Place in hot red syrup prepared and ready. Bring to a boil and boil just a little while. Remove rings. Pack in wide mouth-sterilized jars. Do not crush together. Fill with hot syrup and seal. Be careful not to get spices in jar. I like to use cinnamon oil and oil of cloves and just drop it in until it tastes right to me. 1 or 2 drops are enough. |
