QUICK LOW-CALORIE MINESTRONE 
2 env. or tsp. instant beef broth
3 c. boiling water
4 oz. (1/2 an 8 oz. pkg.) produce department vegetables for coleslaw
2 tbsp. celery flakes
1 tbsp. parsley flakes
1 med. onion, chopped (1/2 c.)
1 (1 lb.) can Italian plum tomatoes, chopped
1 bay leaf
1 tsp. leaf oregano, crumbled
1/2 tsp. salt
1/8 tsp. pepper

Dissolve instant beef broth in boiling water. Add coleslaw vegetables, celery flakes, onion, tomatoes, bay leaf, oregano, salt and pepper. Cover; simmer until vegetables are tender, about 15 minutes.
