CARROT CAKE WITH CREAM CHEESE
FROSTING
 
2 c. flour
2 c. sugar
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
1 1/4 c. cooking oil
4 eggs, beaten
3 c. shredded carrots
1 c. chopped walnuts

Preheat oven to 350 degrees. Sift all dry ingredients together. Add oil, eggs, carrots, and nuts. Pour batter into well greased and floured Bundt pan and bake for 65 minutes or until the center is done.

FROSTING:

1 (8 oz.) pkg. cream cheese
1/4 c. softened butter
3 1/2 c. powdered sugar
2 tsp. vanilla
Walnuts and orange slices for garnish

Blend cream cheese and butter together until fluffy. Beat in sugar and vanilla. Spread on top and sides of cake.
