HUMMINGBIRD CAKE 
3 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
3 eggs
1 c. oil
1 1/2 tsp. vanilla
8 oz. crushed pineapple, undrained
1 c. chopped pecans
2 c. chopped bananas

Combine flour, sugar, soda and cinnamon in large bowl. Add eggs and oil. Stir until dry ingredients are moistened. Stir in vanilla, pineapple, pecans and bananas. Spoon batter into 3 greased 9 inch round pans. Bake at 350 degrees for 35-40 minutes or in 9x13 pan for 60 minutes. Cool 10 minutes and remove from pans. When cooled spread with frosting.

FROSTING:

8 oz. cream cheese, softened
1 stick butter, softened
1 lb. powdered sugar
1 tsp. vanilla

Combine all ingredients and beat until spreading consistency. Spread on cooled cake.
