WELSH CAKES 
1 egg
1/2 c. milk
1 1/4 c. raisins
1 c. sugar
3 1/2 c. flour
2 tsp. nutmeg
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 c. shortening

Beat egg with milk and add raisins. Sift dry ingredients together. Mix in shortening to a mealy mixture and pour milk and raisins in all at once. Mix well and chill for an hour in covered bowl. Roll out 3/4 inch thick; cut with cookie cutter. Cook on top of stove in heavy skillet, or use an electric skillet. Cook 3-4 minutes on each side. Make in the summer to keep your kitchen cool.
