PUMPKIN WALNUT CHEESECAKE | |
1 pkg. (1 1/2 c.) crushed graham crackers 1/4 c. granulated sugar 6 tbsp. butter (melted) 3 pkg. (8 oz.) softened cream cheese 3/4 c. granulated sugar 3/4 c. brown sugar, light 5 eggs 1 can (16 oz.) pumpkin 1 3/4 tsp. pumpkin pie spice 1/4 c. heavy cream Walnut Topping: Combine 6 tablespoons butter with 1 cup light brown sugar in a small bowl; mix well until crumbly. Blend in 1 cup coarsely chopped walnuts. Cheesecake: Blend grahams with 1/4 cup sugar and butter in bowl. Press firmly on bottom and sides of greased (lightly) pan. Beat cream cheese until smooth. Add sugars, blend until well mixed. Beat in eggs, spices and cream at low speed. Pour in pan. Bake in 325 degree oven for 1 hour 35 minutes. Remove cake from oven, sprinkle with walnut topping. Bake an additional 10 minutes. Cool cake on wire rack. Don't cut until completely cooled. |
